Strawberry Saturday

LAAAATE Breakfast
Crepes with a high protein cream cheese filling and topped with strawberries.
(Brent is tweeking this recipe as as type.  I love my husband.)

Lunch
Simple Mediterranean Chicken
Strawberries

It’s strawberry season here.  In fact, this weekend is the strawberry festival so I’ll be eating lots of them the next few weeks.

Snack
Maple Nut Cliff Bar (My favorite)

Dinner
Massive Salad (to try to make up for my lack of veggies earlier in the day) with Goddess Dressing
Grilled Buffalo Burger (I don’t really miss the bun so I often skip it.)

Dessert
2 tbs raw honey

Busy Bee

Today was one of those days I almost forgot to breathe.  We are part of a huge (90+ families) homeschooling co-op and today was our last day with the open house.

Breakfast
This is my staple breakfast.  I eat this A LOT.
Eggs
Ezekiel Toast
Tomato

Lunch

Yes that’s a hot dog.  The co-op provided lunch.  I planned on packing mine but forgot.  I was going to eat the hotdog without guilt but then I change my mind.  Why? I asked myself if this was something I really wanted to feed my body and after pausing to think I decided it wasn’t.  If I would have been a Hebrew National I probably would have eaten it.

So  lunch ended up being a meager plate of veggies and strawberries.

Snack

String Cheese

Dinner

This was the highlight of my day.  My in-laws took us out to a seafood restaurant  at the beach.

Appetizer
Artichoke Dip on Sourdough
Coconut Shrimp with Curry Sauce
Bit of slaw from the shrimp place

Main course

Brent and I ordered different main courses and split them.  We do this all the time when we can’t make up our minds.

I ate 1/2 of this sesame crusted seared Ahi with a cucumber wasabi sauce.

and

1/2 of this Pacific albacore in a light curry sauce.  The sauce was very similar to the curry dipping sauce for the shrimp but lighter.

I love curry.

Operation Six Pack Day 2

Food blogging is new to me.

I keep forgetting to take pictures.

Breakfast
Eggwhite omelet with sundried tomatoes and feta
Ezekiel Cinnamon Raisin Bread
Decaf Coffee
(the decaf is recent b/c one day my body told me it didn’t want caffeine anymore)

Snack

I forgot and by the time I realized I was hungry it was lunch time.  Lucky I didn’t eat the house.

Lunch

Salmon Patty (recipe to come)
Brown Rice with Mushrooms, Pine Nuts, Onion and Fresh Basil.
(Found the recipe in a since forgotten cookbook years ago. I just throw it all together now.)

Mixed Greens with Trader Joe’s Goddess Dressing

Snack

Sundried Tomato Artichoke Dip and Red Peppers
This is one of my older recipes and I always forget about it.  I’m going to try to remember it more often b/c it’s really good especially when I have cravings during PMS.

Dinner

Wild Salmon Fish Tacos With Cabbage and Salsa.

I’m still sort of hungry so I’ll probably go have something to eat before bed.  Probably a cheesestick.  One of my go to lazy girl foods.

Bodybugg update: Yesterday it told me I burned 2142 calories. That included an hour of taekwondo, 5 minutes of snatches, and hours of sitting on the couch.  Hmmm… The jury is still out. I’m hoping it is off by 10% and I really burned 2356 calories.  Either way I was in my calorie range yesterday and today.
