I waited MUCH too long and I was starved by the time lunch came around so I made a GIGANTIC salad. Seriously this picture does not do the size justice.

Side Salad of Turnips, Tomato, Cucumber, and Parsley. Tossed in a tahini yogurt dressing.

It feels good to be eating more vegetables. I’m really trying to make 50%+ of my food veggies but it can be hard especially on busy days. I just not crazy about “grab and go” types of veggies like carrot sticks but it’s worth the effort.

SUPER busy morning!
Breakfast
Brent brought me my old faithful. I typically eat breakfast alone at the computer in the morning since I’m with my kids ALL DAY. All four of us also eat lunch and dinner together almost every day so I don’t feel bad at all.

After breakfast we did a bit of school before rushing out the door to deliver groceries to an elderly lady. We volunteer for an organization that delivers groceries to homebound elderly.
Lunch
I wanted to pack our lunch but didn’t have time so I we decided to stop by Subway for the SECOND time this week. I know. #FAIL ;-)
I ordered my favorite. The exact same sandwich I had on Sunday.

Then we headed to the beach. Like my .99 cowboy hat.

By the afternoon the clouds had left and it was sunshiny.
Don’t tell anyone but this is the view from the McDonald’s. A five star view at a one star restaurant. We stopped with friends to get the kids an ice cream. I had an ice tea. Only an ice tea. Exciting.

We didn’t have taekwondo class tonight so Brent and I spent some time cooking together in the kitchen.

I almost managed to eat all of that swiss chard. It was A LOT.

I was pretty stoked on the chicken. I think I’m going to try to make a blackberry cream sauce before I post the recipe.

I’m out of eggs and when I’m out of eggs you know my kitchen is BARE.
Breakfast
Big bowl of oatmeal with walnuts and cinnamon.
Lunch
A peanut butter and jelly made with heels.
I was lucky to make this my kitchen is so bare.
I also ate a slice of turkey. No veggies b/c my kitchen is bare.
Snack
Popcorn because well that’ about all I had left.
I pop my popcorn on the stove using coconut oil and sea salt.
I warm 1/4 cup of coconut oil over high heat.
Add sea salt and 1 cup of organic kernels and cook over high heat until popping slows down.
I shake the pan continuously while I pop. It sounds like a 9.9 earthquake is happening right under my house.
I like Nutiva coconut oil.
Dinner
I finally went to the grocery and tried to make up my lack of veggies for the day by eating a HUGE salad for dinner.

Tomorrow we pick up our veggies for the CSA the rest of the week should be a bit more colorful.

Father’s Day was a bit rushed this morning because I had forgotten that it was my morning to serve as an usher at my church. (And you thought ushers were only old men in polyester suits.) Still I wanted to make Brent something special for Father’s day since he is a special dad so I quickly made him some french toast. I made it special by adding boysenberry jam and cream cheese, like a peanut butter and jelly, in the center before cooking. It was SO GOOD.

Since we had an 1.5 hour drive to his parent’s house we stopped at Subway. I ordered my favorite: turkey, on whole wheat, no cheese or mayo, spinach, onions, green peppers, lettue, tomato, LOTS of pepperoncinis, LOTS of olives, LOTS of pickles, and a little vinegar and oil. YUM!

Instead of snacking on the pita chips and spinach dip that was out I ate carrots and Sabra hummus.
Dinner
I didn’t want to pull out my camera during a nice dinner but this is what I ate.

1/2 Baked Potato with a Bit of Sour Cream

2 pieces of grilled bread
I skipped the dessert and opted for more strawberries. I’m surprised I didn’t wake up pink the next morning.

So journaling my food has turned out to be a bit more difficult than I thought. I’ve been tracking my calories almost religiously through The Daily Plate but I can’t seem to remember to snap a picture of my food before it’s half way gone. Since I bought my Bodybugg I’ve lost about 4 pounds by simply watching my calories and moving more. Funny how that works.
Yesterday I managed to take pictures of most of my food.

It was a pretty light day over all and even thought the bean salad has veggies it wasn’t close to my ideal amount. I’m one of those people who enjoy eating the same thing for a few meals and then switch it up. It’s just easier in terms of cooking and I hate to throw out food.
