Catch Up

Jul 8, 2010 Author: Jenn | Filed under: Food Journal

Rather than catch you up by posting every little picture of what I have ate in the last week and a half I’ll post of few of my favorites.  I do intend to get back to my daily journal but live has just been REALLY CRAZY the last two weeks.

Breakfasts

Swedish Pancakes.  Enough said.

These were filled with cottage cheese blended with honey and lemon.

Sprouted grain bagel topped with pesto, fried egg (in coconut oil), and tomatoes.

This is seriously one of my most favorite breakfasts EVER!

My standard breakfast EXCEPT I topped my Ezekiel toast with cream cheese blended with fresh strawberries.  YUM!

Lunches are typically leftover dinners soo…

Dinners

Chicken with creamy blackberry sauce.  This is a new recipe I came up with and still needs a few tweaks.  I’m really excited to share it when I’m done.  SO GOOD.

Last week a friend was selling fresh sea bass.  Seriously, like right off the boat.  We grilled it and topped it with mango salsa.

4th of July dinner was my favorite chicken:  chicken grilled in a marinade of olive oil, honey, mint, and citrus.

I also had grilled summer squash, grilled bread topped with my favorite pesto again.  This pesto makes anything good.

We love kebabs around here.  This one was even simpler just olive oil, lemon, and garlic salt.  The super fresh veggies from the CSA made the meal!

Overall I’m happy with my food choices.  I feel very balanced even while tracking calories which is nice.  The scale could be moving a bit faster…of course…but it is moving.  Since I’m out with my husband shooting the videos and we’ve gone out to eat with his mom the last two night, I’ve had way more sodium and less water  than normal so it’s hard to tell. Once I get back to my regular food routine ,I think it will be down lower than I expect.  Normally, I’m NOT concerned this much with the scale but with my certification in less than 8 weeks away I need to stay FOCUSED on reaching that goal.

Jenn

Combo: Wednesday and Thursday

Jun 25, 2010 Author: Jenn | Filed under: Food Journal

So I’ve really been making an effort to eat more veggies.  For me that means more salads because salads are the easiest way for

Wednesday Breakfast

Scrambled Eggs
Ezekiel Toast
Tomato

I’m typically so hungry in the morning that I forget to snap a picture.

After school I decided to workout so right after I had a mid morning snack or “post workout meal”.

Wednesday Snack
“Sort of Rice Pudding”
Brown Rice
Whole Milk
Egg
Bit of Maple Syrup

I think I’m going to play around with this and try to up the protein. I see a favorite post workout snack in the future.

Wednesday Lunch

This beautiful (Not the picture…hoping to get the new iPhone soon.) salad.

Spinach
Romain
Raddichio
Grilled Chicken
Kalamata Olives
Apple
Tomato
Trader Joe’s Goddess Dressing

SO GOOD.

Wednesday Dinner

Swedish Meatballs
Huge Pile of Swiss Chard
1 Red Potato

Thursday Breakfast

My old faithful.  Again.

Scrambled Eggs
Ezekiel Toast
Tomato

Thursday Lunch

I waited MUCH too long and I was starved by the time lunch came around so I made a GIGANTIC salad.  Seriously this picture does not do the size justice.

Green Lettuce
Pear
Kalamata Olives
Tomato
Artichokes
Grilled Chicken
Honey Balsamic Dressing

Thursday Snack

Big bowl of popcorn made in coconut oil.  Unfortunately I don’t think I’ll ever grow tired of popcorn.

Thursday Dinner

Chicken Kebabs
Grilled Summer Squash, Onion, and Tomatoes
Side Salad of Turnips, Tomato, Cucumber, and Parsley.  Tossed in a tahini yogurt dressing.

It feels good to be eating more vegetables.  I’m really trying to make 50%+ of my food veggies but it can be hard especially on busy days.  I just not crazy about “grab and go” types of veggies like carrot sticks but it’s worth the effort.

Jenn

Tuesday: Beach Day!

Jun 23, 2010 Author: Jenn | Filed under: Food Journal

SUPER busy morning!

Breakfast

Brent brought me my old faithful.  I typically eat breakfast alone at the computer in the morning since I’m with my kids ALL DAY.  All four of us also eat lunch and dinner together almost every day so I don’t feel bad at all.

Scrambled eggs
Ezekiel Bread
Tomato

After breakfast we did a bit of school before rushing out the door to deliver groceries to an elderly lady.  We volunteer for an organization that delivers groceries to homebound elderly.

Lunch

I wanted to pack our lunch but didn’t have time so I we decided to stop by Subway for the SECOND time this week.  I know.  #FAIL  ;-)

I ordered my favorite.  The exact same sandwich I had on Sunday.

Then we headed to the beach.  Like my .99 cowboy hat.

By the afternoon the clouds had left and it was sunshiny.

Don’t tell anyone but this is the view from the McDonald’s.  A five star view at a one star restaurant.  We stopped with friends to get the  kids an ice cream.  I had an ice tea.  Only an ice tea. Exciting.

Snack
Cliff bar

Dinner

We didn’t have taekwondo class tonight so Brent and I spent some time cooking together in the kitchen.

I came up with this. Recipes coming soon!

Balsamic Blackberry Chicken
Roasted Fennel with Parmesan
Swiss Chard with Garlic

I almost managed to eat all of that swiss chard.  It was A LOT.

I was pretty stoked on the chicken.  I think I’m going to try to make a blackberry cream sauce before I post the recipe.

Monday

Jun 22, 2010 Author: Jenn | Filed under: Food Journal

I’m out of eggs and when I’m out of eggs you know my kitchen is BARE.

Breakfast

Big bowl of oatmeal with walnuts and cinnamon.

Lunch

A peanut butter and jelly made with heels.

I was lucky to make this my kitchen is so bare.

I also ate a slice of turkey.  No veggies b/c my kitchen is bare.

Snack

Popcorn because well that’ about all I had left.

I pop my popcorn on the stove using coconut oil and sea salt.

I warm 1/4 cup of coconut oil over high heat.
Add sea salt and 1 cup of organic kernels and cook over high heat until popping slows down.
I shake the pan continuously while I pop.  It sounds like a 9.9 earthquake is happening right under my house.

I like Nutiva coconut oil.

Dinner

I finally went to the grocery and tried to make up my lack of veggies for the day by eating a HUGE salad for dinner.

Mixed Greens
Red Peppers
Tomatoes
Olives
Carne Asada
Salsa
Sour Cream

Tomorrow we pick up our veggies for the CSA the rest of the week should be a bit more colorful.

Jenn

Father’s Day

Jun 21, 2010 Author: Jenn | Filed under: Food Journal

Breakfast

Father’s Day was a bit rushed this morning because I had forgotten that it was my morning to serve as an usher at my church.  (And you thought ushers were only old men in polyester suits.)  Still I wanted to make Brent something special for Father’s day since he is a special dad so I quickly made him some french toast.  I made it special by adding boysenberry jam and cream cheese, like a peanut butter and jelly, in the center before cooking.  It was SO GOOD.

Half eaten.

Lunch

Since we had an 1.5 hour drive to his parent’s house we stopped at Subway.  I ordered my favorite: turkey, on whole wheat, no cheese or mayo, spinach, onions, green peppers, lettue, tomato, LOTS of pepperoncinis, LOTS of olives, LOTS of pickles, and a little vinegar and oil.   YUM!

Snacks

Strawberries

Instead of snacking on the pita chips and spinach dip that was out I ate carrots and Sabra hummus.

Dinner

I didn’t want to pull out my camera during a nice dinner but this is what I ate.

Filet Mignon
1/2 Baked Potato with a Bit of Sour Cream
HUGE salad
2 pieces of grilled bread

I skipped the dessert and opted for more strawberries.  I’m surprised I didn’t wake up pink the next morning.

So journaling my food has turned out to be a bit more difficult than I thought.  I’ve been tracking my calories almost religiously through The Daily Plate but I can’t seem to remember to snap a picture of my food before it’s half way gone.  Since I bought my Bodybugg I’ve lost about 4 pounds by simply watching my calories and moving more.   Funny how that works.

Yesterday I managed to take pictures of most of my food.

Breakfast

Lunch
Black Bean Salad (Recipe coming soon)
Salmon Patty

Snack
Popcorn popped in coconut oil.

Dinner
(more) Black Bean Salad
Grilled Chicken

It was a pretty light day over all and even thought the bean salad  has veggies it wasn’t close to my ideal amount.  I’m one of those people who enjoy eating the same thing for a few meals and then switch it up.  It’s just easier in terms of cooking and I hate to throw out food.

Saturday

May 22, 2010 Author: Jenn | Filed under: Food Journal

Today is one of those days I’d rather just lie about what I had to eat.  I ate very few vegetables.  I went to Wendy’s.  I didn’t make much of my dinner.  I finished the day with popcorn and homemade ice cream.  Oh well!  It was a great day and it’s life.  For more on my food philosophy read Real vs. REALity.

Breakfast
Oatmeal with Cinnamon
Two Hard Boiled Eggs

Snack
Protein Cookie Dough

Lunch
Wendy’s Chili :-)

Dinner
Rotisserie Chicken from Grocery Store
Swiss Chard with Leeks

A word on my veggies.  I eat many of the same veggies over and over again because we are members of a CSA so we eat whatever comes in our box for the week.  What comes in our box depends on the season of the years.

Evening Snack
Popcorn (I pop it on the stove in coconut oil.  I LOVE it.)
Homemade Maple Coffe Ice Cream

Brent makes the best ice cream!  Isn’t he adorable!!!  I LOVE him!

I know I just said it but I have to say it again!  I LOVE HIM!!!

Jenn
